When things get too hot to handle, here's a no-fuss dish that's guaranteed to help her chill out.
Cold buckwheat noodles (serves one) First, make the dipping sauce by mixing the noodle ingredients together in a saucepan and bringing to the boil. Then turn down the flame, and simmer the ingredients for 10 minutes.
Place the noodles in a saucepan of boiling water. Turn the flame from high to low (to ensure the noodles don't stick to the pan) and cook for five to eight minutes or until the noodles are soft.
Drain the noodles and place in ice-cold water. Drain again and put the noodles in a serving bowl. Place the bowl on a plate with ice around the bowl. Sprinkle Kizami Nori on the noodles.
Serve ginger, spring onions, grated radish, dipping sauce and wasabi paste in small Japanese style serving dishes.
You'll need
- 70g buckwheat noodles (thin Japanese noodle made of buckwheat)
- 10g Kizami nori (or use any kind of seaweed, available at Carrefour or Spinneys)
- 5g spring onions
- 5g grated radish
- 5g grated ginger
- 5g wasabi paste
Dipping Sauce
- 70ml Kikkoman soy sauce
- 75g Mirin
- 35g Hondashi moto (a flavouring available in all supermarkets)
- 30g sugar
- 10g salt
- 200ml water
